St. Patrick's Day Fun: Day 4- Rainbow JELL-O!

When I think about whimsical leprechauns, shamrocks, and pots of gold, there is one more thing that comes to my mind. Rainbows of course! And so today I thought I'd share with you one of my mother-in-law's favorite recipes for putting together a layered rainbow salad! It does take a little more time as you wait for each layer to set up, but it is VERY EASY to do, and the presentation of this side dish is a hit! (Very yummy, too!)

Ingredients:

6 small boxes of JELL-O (red, orange, yellow, green, blue & purple)
1 large carton of vanilla yogurt
whipped topping (such as Cool Whip or even from the spray can)

And here's what you do!

1. Dissolve one flavor of Jell-O in 1 cup of hot water. (I like to start with the purple as my bottom layer.)

2. Divide this mixture in half by taking approximately 2/3 cup out of it and placing in a 2nd bowl. What is left, pour into the bottom of a square glass pan. Place into refrigerator to set.

3. Take the remaining 2/3 cup of the dissolved Jell-O and mix in 1/3 cup yogurt. Set aside until the Jell-O that is in the refrigerator is set. (Approximately 20 minutes.)

4. Gently pour the yogurt/Jell-O mixture over top of the bottom layer. Place back inside of the refrigerator to allow this layer to now set.

Repeat this same process with each color of Jell-O you are using!

Special Note: When I make this side dish, I like to allow myself plenty of time to finish by beginning in the morning. I carry on with the rest of my daily activities and just check on it periodically. When it's time to put on a new layer, it literally takes about 2 minutes. It's very simple!

Once you are finished with all layers, your new rainbow salad is going to look like this!

I like to then top it with a dollop of whipped cream. DEE.LISH.

And of course if your layered Jell-O doesn't come out of the pan just perfect...no stress! Looks great thrown into a glass and topped with cream. Your guests will think that is the way it had always been planned.... ;)

  9. I LOVE this! I wish I would have found it sooner! We just threw an "over the rainbow" party for my grandmother who turned 75. I posted some pictures of the rainbow snacks we made, but this would have been really cute! I would love to see it with a light shining through it :-)

  13. Nice! My jello rainbow was entirely jello, ROY G BIV , I make it in a bundt pan, using the jigglers recipe. I let each layer set and the next one cool some before adding. I pour it over a spoon so that the previous layer doesn't get disturbed. It is a family favorite and travels well in the bundt pan. I spray the pan before I start and wipe the oil off with paper towels.
